Madeira Island Lapas Rice

The lapa is a mollusk very popular among the islanders of Madeira, being served at the table as an entree of fish dishes or just as a snack, to accompany white wine, green or even beer. Lapas rice is a typical Madeiran dish, much appreciated by locals, but especially by the tourists who spread it worldwide.


Ingredients:

(For 2 to 3 persons)

1 glass of Madeira wine
1 bay leaf
150 ml of oil
1.5 kg of limpets
2 onions
2 garlic cloves
2 tomatoes
400 g of rice
Cloves, ground pepper and salt q.s.
Salsa q.b.

Confection:

Cook the limpets and reserve the cooking water.

Pour the oil in a bowl and sauté the onion, tomato, garlic, bay leaf, clove and ground pepper.
