Caldeirada à Madeirense

Ingredients:
Miscellaneous fish
2 Onions
4 Potatoes
1 large pepper
2 Very mature tomatoes
Garlic q.b.
Chili q.b.
Chili Pasta q.s.
Olive oil q.s.
1 fish broth
1 glass of White Wine
1 glass of Water
1 bouquet of parsley

Preparation:

On a platter, put a good layer of onion to the slices and over the potatoes to the slices and the chosen fish.
Also, place the sliced tomatoes, peppers and parsley.
In a vessel mix the white wine, the peppercorn mass, the chopped garlic and a fish broth.
Pour this marinade over the layers, sprinkle with olive oil generously and add a glass of water.
Bake covered for about 45 mins. Without stirring, shaking the pan slightly occasionally so that the potato slices and the fish do not break.
It is advisable to check the sauce from time to time so that it does not dry out by adding warm water whenever warranted.
After cooking, bring to serve in the cooking pot itself or put in a clay pot.
This dish accompanies very well with sweet potatoes, but mostly with hot or warm cooked corn.
