Fish Fillets Sword with Banana


Today a recipe inspired by the gastronomy of the island of Madeira. Fillets of swordfish with banana, a combination that may seem strange, but that should not fail to try at home or, if they have the opportunity, a trip to the beautiful island of Madeira and thus taste this and other good things there! In fact, the smallest of trips is almost always to discover the gastronomy of the places we go.




However there are already 3 finalists of the Fermipan competition. They are Sara Oliveira, with her rich Chocolate Bread, Cátia Dias, with the Apple and Sultanas Folar, and Cristina Bessa with the Bola de Carne. Thank you to all who participated and took the trouble to send and create tasty recipes with Fermipan and allusive Easter.

Ingredients for 2 people:

4 fillets of swordfish
Lemon juice q.s.
Salt and pepper q.s.
1 clove garlic
Flour q.b.
1 beaten egg
2 bananas from Madeira
Chopped parsley q.s.

Preparation:

Season the swordfish fillets with lemon juice, salt and pepper and the chopped garlic and let them take some time to taste.
In the meantime prepare two containers. In one place the flour and in the other put the beaten egg.
Heat the oil or olive oil (I used frying oil) in a frying pan and let it warm.
Drain the fillets of the marinade first and pass them through the flour and then the beaten egg. Then fry them in the hot oil until golden brown and drain on absorbent paper.
Meanwhile peel the bananas and cut them in half in the direction with length. Stir in the flour and egg and fry them quickly in the oil or olive oil to make them brown and also let them drain on the absorbent paper.
Then place the fillets on a platter or serving plate and over each fillet arrange a piece of banana. Sprinkle with chopped parsley and serve with sauteed potatoes and boiled broccoli or a green salad.
